Add everything except the spinach and cook for 15-20 minutes until the rice is cooked.33simmer stew
Add the spinach, turn off the heat and let sit for 5 minutes.44add spinach
Serve your stew topped with fresh cilantro and a squeeze of fresh lime juice. Even better, fresh naan or pita for dipping.
