Preheat the oven to 350 degrees F. Lightly coat a 9 x 13 baking dish with a little oil to prevent sticking.1
Heat a large skillet to medium-low heat and add the olive oil, and the chopped spinach. Stir and cook the spinach until wilted and set aside to cool.2
Into a large bowl add the eggs and whisk. Add the spinach, chopped smoked salmon, green onion, garlic powder, sea salt, and pepper to the egg mixture.3
Pour into the bottom of the dish. On top of the egg casserole mixture, in a single layer, add the halved grape tomatoes.4
