Arroz Rojo is a basic staple in Mexico, and as a proud Mexican myself, I want to share this recipe with you.
The red colour comes from the fresh tomatoes used for make the salsa in which the rice is cooked. It can be spicy or not spicy at all, it's up to you, either way it's delicious!
A live saver! you can eat it just with pita or the flat bread of your choosing, it can be a dressing, a mayo substitution in sandwiches, or a dip for your veggies. It is so versatile, that I had to include it in my recipe repertoire.
